Sauerkraut
Sauerkraut is a german pickle consisting of lacto-fermented cabbage, plain or flavoured with other vegetables, herbs and spices. Raw, lacto-fermented sauerkraut is rich in enzymes and beneficial microbes, and also contains live lactic acid bacteria (probiotics). It's a great source of vitamins C, B, and K, it's low in calories and high in calcium and magnesium, and it's a very good source of dietary fibre, folate, iron, potassium, copper, and manganese.

The classic cabbage sauerkraut is simplicity at it’s best, with only two humble ingredients, cabbage and salt. In time lactic acid bacteria convert the raw cabbage into a tantalisingly tangy pickle.
